Punctuation...does it matter?
If I'm targeting a phrase that isn't grammatically correct such as "teach english volunteer positions" could I end a sentence ".......teach english." then start the next one - "volunteer positions......" Does the punctuation make any difference to the weight?

maybe put is as part of a quote in a sentence, like "If you have searched ...."" then you have found the right site.

Does it really matter:
In terms of rankings probably not. However targeting specific phrases does not necessarily mean you have to string those words in that specific order to rank for them. Use words often in your text but make it sound good. If I land on a site that's gramatically incorrect I'm probably going to leave which means that having your number 1 ranking for that keyphrase is worth "000000" nothing.
Put those phrases in your Title, Description and Keywords and if you can make your page name something on the lines of "teach-english-volunteer-positions.html". Use ALT tages, image descriptions but get creative.
It's keeping clients interested in your site that's the trick.

This is actually quite an interesting concept
Searchers usually use grammatically incorrect phrases (especially when google says the word "the" is too common and is ignored)
At the same time, anti-spam algorithms designed to target auto/machine generated content attempt to filter out pages based on poor grammar.
Some steps that can be taken:
get incoming link text to be grammatically correct, splitting your incorrect phrase over several links, eg
"click here if you want to teach english"
"volunteer positions teaching english"
etc etc
Read up on phrase based optimisation, thegypsy goes on about this all the time - i'm sure you'll find something of his to study

I think what you are asking is..................
is: ...........taught by people who teach english. Volunteer positions are available from xyz agency...................
the same as: teach english volunteer positions

notice what it highlights in the results and the number of indexed pages.
Now do the same in MSN and Yahoo and write me 1500 words entitled "Punctuation and spaces on varying search engines, compare and contrast"

Well i just ran a small experiment of my own based on the 2 keyphrases discussed:
I first ran a google search for: "teach english. Volunteer positions"
And secondly ran one for "teach english Volunteer positions"
The only thing missing was the period in the second search
all first pages results were identical...i looked no further 
the punctuation will not make a difference but in case 2 you will be adding other words to that sentence and those will make a difference

Hmmm... it's all very interesting! I think I'll try and keep weird grammar to Titles or headlines as you have more leniency. But will through in a few with the full stop (.) just to see how they go.

The matter of incorrect keyterms is also discussed among webmasters but the number of searches people do everyday for the terms that are incorrect is not that high.

trying to find a co-branded wrist band company in the UK.
I searched Google for "cobrand bands" (not the best searchterm i admit) and Number one had this description and highlighted terms:
27 Feb 2007 ... MySpace to co-brand. Bands have predictable spikes in traffic. ... a great way to use MySpace is to partner with that band and say, ...
