Meta descriptions
I'm redoing the keywords for the whole of my site. One question I have is should I have a different meta description for each page, just for different sections or a standard one for the whole site???

You should use a different description, different set of keywords and different page title for each page.

I would like to add that the description meta is not a ranking factor and should be written in a concise way that accurately describes what the page is about, yet motivating enough to garner a click. Titles should be friendly, concise, and relevant to whats offered on page, conversions as well as ranking will improve dramatically over time.
CE, keywords? You were talking about relevant on-page kewords and phrases, correct?

I usually use 200 - 250 characters of content, taken directly from the content of the website, is this a good practice, or should I use original content to describe the content of the page in the meta description code ?

Think of the description tag as an introduction to the page. Similar to the lead in's you see with articles. It needs to describe in just a few words what the page is about. If your page is original content then the content from the page you place inside the description tag will also be original.
