Its never to early to start SEO, think of your keyword research in the mean time, its always better to let your site come into the world well optimized than just a random group of pages with nothing to offer... if your not careful that may be how you are indexed and then you would havte wait for your seo work to get you outa that hole, could take a few hours or it could take 3 weeks or more... start big
